Potato Halwa with Makhana(Lotus Seed) Rabdi

This nice, creamy, smooth dessert will serve your sweet tooth. A delicious treat which doesn’t require any special ingredients. Most of these should be available to you within the comfort of your home and you would probably not need to rush to a grocery store to purchase these things. This sweet combo is easy to make and will melt in your mouth in no time.

Best part of this dessert is you can eat it even during your Pooja-fasting days. So, let’s see if we can amaze your taste buds with the sweet potato halwa and nice creamy rabri.

Ingredients(Serves 3-4 people)

Potato Halwa:

  • Potatoes – 3-4 medium size

  • Clarified butter (Ghee) or unsalted butter -1/4 cup

  • Sugar – 1/2 cup

  • Cardamom powder – 1 tsp

  • Almonds – 6-7

  • Some Saffron Strands

    (any other dry fruits of your liking)

 

Makhana (Lotus Seed) Rabri:

  • Whole milk – 2 Cups (or low fat milk )

  • Makhana( Lotus Seeds) – 1 Cup

  • Sugar – 3 tbsp

  • Cardamom powder – 1 tsp

  • Almonds – 7-8

    (any other dry fruits of your liking)

Preparation:

Potato Halwa:

  • Boil the potatoes, let them cool for a couple of minutes and then mash them to a smooth paste.IMG_20160825_145238

  • Heat a pan on medium flame and add 1/4 cup clarified butter.

  • Add your mashed potatoes in clarified butter and roast for 15-20 minutes or till a nice brown color. Make sure your pan heat is on medium flame.

  • I added some saffron strands to give its nice yellow color.

  • When you smell a nice aroma, add 1/2 cup of sugar and all dry fruits to it and roast it just for couple of minutes to make a nice consistency.IMG_20160825_151833

  • Now, switch off your flame and keep aside.IMG_20160825

 

Makhana (Lotus Seed) Rabri:

  • Dry roast your 1 cup of Makhana and grind it in a semi-powder form and keep aside.IMG_20160825_153908

  • Boil 2 cups of whole milk.

  • Now add Makahana powder, cardamom powder and other dry fruits to the boiled milk.makhana

  • Put it on a very low flame and stir it on regular intervals and it will be ready in 10-15 minutes.

  • Remove it from the burner and let it sit for 10-15 minutes then add your 3 tbsp sugar and stir again. No need of putting it on flame.

The dessert is ready! You can make both the halwa and rabdi in parallel to save your time.rabdi-halua
